WHOLE ROASTED PUMPKIN

What you’ll need:

  • 1 medium pumpkin
  • Olive oil
  • Balsamic vinegar
  • Honey or muscovado sugar
  • Fresh sage leaves
  • Garlic
  • Salt and pepper to taste

 Cooking instructions

Preheat oven to 200 C (180 fan) gas 4

  1. Cut cap off pumpkin, empty seeds. Keep the cap!
  2. Crush garlic cloves and sage leaves and mix with olive oil, 1tbsp of balsamic vinegar, honey and salt and pepper.
  3. Pour mixture into the pumpkin cavity.
  4. Replace cap
  5. Cook for 30 to 45 minutes, or until flesh is tender and thoroughly cooked.
  6. Enjoy!
