What you’ll need:
- 1 medium pumpkin
- Olive oil
- Balsamic vinegar
- Honey or muscovado sugar
- Fresh sage leaves
- Salt and pepper to taste
Preheat oven to 200 C (180 fan) gas 4
- Cut cap off pumpkin, empty seeds. Keep the cap!
- Crush garlic cloves and sage leaves and mix with olive oil, 1tbsp of balsamic vinegar, honey and salt and pepper.
- Pour mixture into the pumpkin cavity.
- Replace cap
- Cook for 30 to 45 minutes, or until flesh is tender and thoroughly cooked.
